a cider project run by family & friends, bardos is on a mission to change the way you view cider & to do it all with the smallest carbon footprint possible. all the fruit they source comes from feral, abandoned, derelict & private historic orchards (some of which date back to the gold rush era!) or from sustainable wineries that have leftover grapes or grape pomace that would otherwise go to waste. reducing food waste & producing incredible & unique ciders has been a goal that they've succeeded at immensely!
the saint cabora cider / fruit wine is made by pouring aged cider over fresh-pressed pomace from wines made by bucklin old hill ranch & bedrock wine co (two historic sonoma wineries who also practice dry-farming) - then it referments in bottle, pet-nat style - giving us a lightly carbonated, juicy & complex - tart crab apple & cranberry, just the right amount of funk & a bright, zippy finish. this one comes in a 500ml bottle - perfect for a cheeky lunch cider or park drink!
