Grape: 100% Aspro Potamisi (a rare Greek grape!)

indigenous greek grapes come from super old bush vines on the aegean island of tinos - a blend of early-harvest & late-harvest grapes vinified the same way - crushed in whole bunches & pressed vertically - spontaneous ferment - aged for 2 years in wooden vats before being bottled without any fining or filtration or SO2! 

the wine is savoury & slightly salty, with notes of preserved lemon, macadamia nut, apricot fuzz, wild honey, ginger & a touch of almond bitterness on the finish
