winemaker rosalia molina produces organic wines in one of spain's highest altitude wineries - her mission is to make wines that express the terroir of the unique manchuela region - the climate pushes the limits for grape-growing here at 1100 meters above sea level - they even get frost sometimes! the grapes experience a unique range of inner temperatures during the growing season that encourages even ripening & helps them retain natural acidity & freshness
this white blend sees a cute 12 hours of cold maceration (skin-contact) in stainless steel tanks - spends 7 months on lees with a twice a week battonage before being aged in clay & some oak
lots of explosive tropical fruits - candied orange peels, tangerine & pear - persimmon - touch of honey & a waxy aftertaste
