the majority of the wine is fermented & aged in stainless steel for a few months, with a small amount aged in oak & blended back in before bottling - aged in bottle for another 2 months before release 

the wine is extremely aromatic & bold - notes of acacia flowers, peaches & savoury herbs, with bold, mouth-watering acidity, a creamy texture & a persistent salinity on the finish
