on the nose, lots of gentian flower & star anise - on the palate, there’s a chalky texture (think rockets candy), complimented by notes of earthy, salty ginger tea, with lemon curd acidity
hand-harvested grapes are first destemmed - pneumatic pressing - grapes spend 21 days on skins - fermented & aged in barrel on fine lees - no so2 added at bottling
