organic grapes were destemmed - wild ferment with twice-daily punchdowns - pressed after 232 days (!!!) on skins - aged in neutral barrels for a few months - bottled without filtration or fining - minimal so2 added
the wine is aromatic & delicate, with a soft, plush texture - notes of nectarine, Cutie oranges, wild honey, jasmine tea & savoury spices
