Fermented whole cluster in both steel vat and amphora for 30-40 days. The wine is aged in barrel for 4 months and then a further 2 months in steel, before being bottled unfined, unfiltered with no SO2.
Cati Ribot, a 3rd-generation winemaker, has been making wine in the arid flatlands surrounding Santa Margalida for the past 15 years. She is one of only three natural winemakers on the island of Mallorca and prides herself in growing pre-dominantly Mallorcan grape varieties that were previously on the brink of extinction.
A touch of 'funk' with notes of raspberry leaf herbaceousness, wet earth, crushed violets, and dried blackberries. Treat yourself to something new!
