in the cellar, low intervention - this wine is bottled with a small dosage to kickstart secondary fermentation (aka champagne method) - then it's aged 36 months in bottle on lees & disgorged for a crystal clear finished wine
on the palate, notes of intense honeysuckle, brown sugar on toast, green & yellow apple pie, star anise, apricot skins
