old bush vines are picked early - the grapes are chilled overnight & pressed into stainless steel tanks - wild ferment in large, old french oak barrels - aged for 9 months on lees with regular stirring for added complexity & texture - gentle filtration before bottling - tiny bit of so2 added
the wine is aromatic & fresh, with lots of spice, dried rose petals & fleshy red fruits
