grapes come from organic/biodynamic (practicing) vines - wild ferment with 14 days of skin maceration on all grapes - 70% of the wine is aged in stainless steel & 30% is aged in chestnut vessels - bottled unfined & unfiltered
the wine is aromatic & light, with notes of black cherry, blackberry jam, spice, pepper & olive brine - classic sicilian minerality - very dry, with less than 1 g/L residual sugar
