Grape: a blend of Chardonnay, Gruner Veltliner, Pinot Blanc, Pinot Gris & Welschriesling

grapes are hand-harvested from organic/biodynamic vines, grown in a mix of limestone, schist & sandy soils - macerated with stems overnight - spontaneous ferment in stainless steel - aged on lees for 14 months in large old oak - bottled unfined/unfiltered with a tiny amount of so2 added at bottling

the wine is hazy & energetic, with lots of salinity - notes of white flowers, citrus peel, pear skin, crushed stones, nutmeg & a chalky minerality - make sure to give it a 'shake' before pouring for best enjoyment!
